How to mull a wine?
Novembrrrrr! Time to snug and cuddle into your linen bedding with a thermos of gluhwein. Try out simple mulled wine recipe from my treasury. You need just wine, spices, a glass of juice and a thermos, of course (nothing can be done without it in November)
I have come to the conclusion that adding citrus juices (lemon, orange, clementine, whatever) to mulled wine sours it unnecessarily and does something funky to the sugar structure (adds fructose to saccharose?) that makes for nasty after-effects. I mean that any sugar makes a headache in a duet with alcohol. Unless it is a glass of grape juice per a bottle of wine. It is not a joke you need:
- 2 cinnamon ticks
- 3 slices of a ginger root
- 2-3 cloves
- rosemary
- allspice
Mix it all and put for an hour to a pot filled with:
- 1 bottle of wine (I use dry Chilly wine)
- 1 glass of simple grape juice
Don’t overthink this. The mulling wine should be red & fruity. Just use a pretty cheap dry wine for this purpose, after mulling you wont ever feel - did it cost 5 or 50$. Pricey wines lose all their nuance during heating, no matter how lovely their notes of oak or blackbird song.
I usually don’t bring it to the boil, just mull for 10 minutes and put all in a thermos for an hour. And thats it! Don’t forget to put a rosemary in a glass before serving.
